Ingredients

  • 2 pounds ground beef (no leaner than 85%)
  • 1/2 cup onion, chopped
  • 3 tablespoons fresh parsley, chopped
  • 3/4 cup Italian bread crumbs
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/2 cup ketchup For glazing
  • 2 tablespoons balsamic vinegar For glazing
  • 3 tablespoons brown sugar For glazing

Instructions
 

Preparation

  • Line the inside of a crockpot with foil. Spray the foil with non-stick cooking spray to prevent sticking.
  • In a large bowl, combine the ground beef, chopped onion, parsley, Italian breadcrumbs, milk, Worcestershire sauce, eggs, garlic powder, salt, and pepper. Mix until just combined.
  • Shape the meat mixture into a large oval and place it on top of the foil in the crockpot.
  • In a small bowl, whisk together the ketchup, balsamic vinegar, and brown sugar. Brush half of this mixture over the top of the meatloaf.

Cooking

  • Cook on low for 6 hours or high for 3 hours, ensuring the internal temperature reaches 160°F.

Serving

  • Once cooked, top the meatloaf with the remaining glaze mixture, slice, and serve warm with the leftover glaze sauce on the side.

Notes

Best served warm. Can be paired with mashed potatoes, green beans, or a salad. Store leftovers in the refrigerator for up to 3-4 days or freeze for up to 3 months. Thaw in the fridge before reheating.
