Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 large bell pepper, sliced
  • 1 large onion, sliced
  • 1 packet fajita seasoning mix
  • 1 cup chicken broth

For Serving

  • Tortillas For serving
  • Optional toppings: sour cream, avocado, cheese, salsa Customize as desired

Instructions
 

Preparation

  • Place the chicken breasts in the slow cooker.
  • Add the sliced bell pepper, onion, and fajita seasoning mix on top of the chicken.
  • Pour the chicken broth over the mixture.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken in the slow cooker and mix it with the veggies and juices.

Serving

  • Serve in tortillas and add your favorite toppings.

Notes

For extra flavor, marinate the chicken in the fajita seasoning and some lime juice for a couple of hours before cooking. You can add more vegetables like zucchini or mushrooms for extra nutrition and flavor. Adjust the seasoning to your liking.
