Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 1 large yellow onion, thinly sliced
  • 3 bell peppers (red, yellow, and green), thinly sliced
  • 2 tablespoons olive oil For coating the crockpot
  • 4 cloves garlic, minced

Fajita Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper

To Serve

  • Flour tortillas For wrapping the fajitas
  • 1 lime, cut into wedges For serving
  • Optional toppings: Cilantro, shredded cheese, sour cream, salsa, guacamole, or sliced avocados

Instructions
 

Preparation

  • In a small bowl, mix the chili powder, ground cumin, paprika, dried oregano, salt, and black pepper to create the fajita seasoning.
  • Coat the insert of the crockpot with olive oil and layer the sliced onions and bell peppers at the bottom.
  • Rub the chicken breasts with the seasoning mixture until they are evenly covered.
  • Place the seasoned chicken breasts on top of the vegetables in the crockpot.
  • Add the minced garlic over the chicken.

Cooking

  • Cover the crockpot and cook on high heat for 2½ to 3 hours, or until the chicken is tender and fully cooked.
  • Once cooked, remove the chicken from the crockpot and cut it into strips or shred it.
  • Return the chicken to the crockpot and stir it together with the onions, bell peppers, and garlic.

Serving

  • Warm the tortillas according to the package instructions.
  • Serve the chicken fajita mixture on warm tortillas and add your favorite toppings, like cilantro, cheese, sour cream, salsa, guacamole, or sliced avocados.
  • Enjoy with lime wedges!

Notes

For extra flavor, marinate the chicken in the seasoning mix for a few hours or overnight before cooking. Feel free to add any other vegetables you enjoy, such as zucchini or mushrooms. To make the meal lighter, use whole wheat tortillas or lettuce wraps instead of flour tortillas.
