Ingredients
  

For the chicken

  • 4 pieces boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil, divided

For the sauce

  • 2 cloves minced garlic
  • ½ red bell pepper, sliced
  • ½ yellow bell pepper, sliced
  • 8 ounces sliced mushrooms
  • 1 can (15-ounce) crushed tomatoes
  • ¼ cup heavy cream
  • ½ cup chicken broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

For garnish

  • ½ cup chopped fresh basil
  • Freshly grated parmesan cheese for garnish

Instructions
 

Preparation

  • Season the chicken breasts with Italian seasoning and salt and pepper.
  • Heat half of the olive oil over medium-high heat in a large skillet.

Cooking

  • Cook the chicken for 5-8 minutes on each side until browned and a thermometer reads 165°F. Set aside.
  • Add the remaining olive oil, garlic, bell peppers, and mushrooms to the skillet. Cook until tender.
  • Stir in crushed tomatoes, heavy cream, chicken broth, additional Italian seasoning, and salt and pepper. Simmer the sauce until thickened.
  • Return the chicken to the skillet until heated through.

Serving

  • Serve over hot pasta and garnish with fresh basil and parmesan cheese.

Notes

Consider marinating the chicken in Italian dressing for extra flavor. You can add more vegetables like zucchini or spinach, and adjust creaminess to your taste. Fresh herbs can enhance the dish.
