Main Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- fresh parsley optional, for garnish
Method
Preheat the oven to 400°F. Pat 4 bone-in, skin-on thighs dry and season with salt and pepper.
Heat 2 tablespoons olive oil over medium-high heat. Sear skin-side down for 5–7 minutes, then turn and sear 5–7 minutes more until browned; immediately transfer to a baking dish, skin-side up.
Combine 1 cup heavy cream, 3 minced garlic cloves, and 1/2 cup grated Parmesan. Pour around the thighs, leaving the skin above the liquid.
Bake uncovered at 400°F for about 25–30 minutes, or until the thickest meat away from the bone reaches 165°F.
Rest for 5 minutes, then divide into 4 portions with the sauce. Garnish with optional parsley.
- Refrigerate promptly at 40°F or below; use within 3 days.
- Reheat cooked leftovers to 165°F.
