Ingredients
  

For the cream base

  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic, minced
  • 3/4 cup heavy cream
  • 1/2 cup whole milk
  • 3 tablespoons all-purpose flour

For seasoning

  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon onion powder
  • 2 tablespoons granulated sugar Adjust to taste
  • Pinch cayenne pepper (optional) For added heat

  • 5 cups corn (frozen, fresh, or canned and drained)

Preparation

  • Melt the butter in a medium saucepan over medium heat.
  • Add the minced garlic and cook for 30 seconds, stirring regularly.

Cooking

  • Add the corn, heavy cream, salt, pepper, onion powder, and sugar. Stir to combine.
  • In a small bowl, whisk together the milk and flour. Pour this mixture into the corn mixture and stir to combine.
  • Cook on medium heat, stirring constantly for 5 minutes, or until the mixture thickens and the corn is cooked through.
  • Season with additional salt, pepper, and/or cayenne pepper if desired.

Notes

Creamed corn can be served hot as a side dish with grilled meats, roasted chicken, or hearty vegetable dishes. Leftovers can be stored in the fridge for up to 3 days or frozen for longer storage. For added flavor, try using fresh herbs like thyme or parsley, or blend the mixture for a smoother texture. Adjust sugar to your taste.
