Ingredients
  

Base ingredients

  • 1 tablespoon butter For cooking the vegetables
  • 1 small diced onion Adds sweetness and flavor
  • 1 pound sliced baby Bella mushrooms Fresh mushrooms are best

Flavorings and thickeners

  • ΒΌ cup all-purpose flour Thickens the soup
  • 1 teaspoon Italian seasoning For flavor enhancement
  • 1 teaspoon fresh thyme Adds an earthy flavor
  • 3 cloves minced garlic For depth of flavor
  • to taste Salt and pepper To season the soup

Liquids

  • 4 cups chicken broth Base for the soup
  • 1 cup heavy cream Makes the soup creamy

Instructions
 

Cooking the base

  • In a large pot, add the butter, diced onion, and sliced baby Bella mushrooms. Cook over medium-high heat until tender.

Thickening the soup

  • Whisk in the all-purpose flour, Italian seasoning, fresh thyme, minced garlic, and salt and pepper. Stir until everything is coated.

Adding broth

  • Add in the chicken broth and simmer over medium-high heat for 5-7 minutes.

Finishing touches

  • Add in the heavy cream and let simmer for 3-5 more minutes.

Notes

Serve hot and garnish with fresh herbs. Stores well for 3-4 days in an airtight container. Reheat before serving.
