Main Ingredients
- 1 pound steak sirloin or ribeye
- 1/2 cup unsalted butter softened
- 4 cloves garlic minced
- 2 tablespoons fresh parsley chopped
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- red pepper flakes optional
- cooking oil as needed
Instructions
Cut steak into similar bite-size pieces, pat dry, and season with salt and pepper. Mix softened butter with finely minced garlic, parsley, smoked paprika, and optional red pepper flakes.
Lightly coat a heavy skillet with cooking oil and heat over medium-high heat. Cook steak in one uncrowded layer for roughly 2–3 minutes per side until browned and at least 145°F in the center; work in batches if necessary.
Transfer the steak to a plate and rest for at least 3 minutes after it reaches 145°F.
Toss the rested, warm steak with the prepared butter off the heat until the butter melts. Divide steak and butter among four portions and serve immediately.
- The 19-minute total includes a 3-minute rest and assumes one searing batch; extra batches take longer.
- Refrigerate within 2 hours; use within 3–4 days.
- Reheat to 165°F; reheated steak will be more firmly cooked.
