Ingredients

Pasta and Blended Sauce

  • 12 oz dry pasta boil according to package
  • 2 cups cottage cheese
  • ½ cup finely grated Parmesan
  • ¼ cup milk
  • 2 small cloves garlic peeled and minced
  • to taste salt and pepper

Conditional Extra Liquid

  • 0–¼ cup reserved pasta cooking water only as needed, 1 tablespoon at a time

Instructions

  • Cook 12 ounces dry pasta to package al dente, reserving a little cooking water before draining.
  • Blend cottage cheese, Parmesan, milk, and minced garlic until smooth, scraping the jar as necessary. Do not add boiling liquid to the sealed blender.
  • Warm the sauce in a wide pan on low for 3–5 minutes, stirring and keeping below a simmer. Fold drained hot pasta through until coated and evenly hot.
  • Use tablespoon additions of reserved water only if needed to loosen, with a maximum of ¼ cup extra. Taste salt and pepper and divide into 4 portions without hard boiling.

Notes

Blend before warming. The sauce contains fresh garlic and cottage cheese and is not a traditional cream Alfredo. Use conditional pasta water only as needed and serve promptly.
