Ingredients
  

Dry Ingredients

  • 2 ¾ cups all-purpose flour Make sure to measure the flour correctly.
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt

Wet Ingredients

  • cup melted unsalted butter
  • 2 ¼ cups packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Mix-ins

  • 2 cups milk chocolate chips Can sprinkle some on top for added sweetness.
  • 1 cup chopped walnuts Optional.

Preparation

  • Preheat the oven to 350°F. Spray a 9x13x2-inch pan with nonstick cooking spray and set aside.
  • In a medium bowl, whisk together the dry ingredients: flour, baking powder, and salt.
  • In a large bowl, mix together the melted butter and brown sugar until well combined.
  • Add the eggs and vanilla extract to the butter and sugar mixture. Mix until fully combined.

Mixing

  • Gradually add the flour mixture to the wet ingredients and stir until just combined.
  • Gently fold in the chocolate chips and walnuts, if using.

Baking

  • Pour the dough into the prepared pan and bake for 30-35 minutes until the edges are golden brown.
  • Allow the bars to cool completely before slicing and serving.

Notes

Congo Bars can be served with a scoop of vanilla ice cream for extra enjoyment. They can be stored in an airtight container at room temperature for about 4-5 days or frozen for up to 3 months.
