  • Fresh cilantro or green onions Adds freshness; can substitute with parsley.

Instructions
 

Cooking the Chicken

  • Start by heating the vegetable oil in a large pan over medium heat.
  • Once the oil is hot, add the garlic and ginger. Sauté them for about 1 minute until fragrant.
  • Add the chicken breasts to the pan. Cook for 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Season with salt and pepper.

Making the Sauce

  • Pour in the coconut milk and soy sauce. Stir well and bring to a simmer.
  • Let the mixture cook for another 5-10 minutes until the sauce thickens slightly.

Finishing and Serving

  • Stir in the lime juice and remove from heat.
  • Serve the chicken over cooked rice and garnish with fresh cilantro or green onions.

Notes

Feel free to add vegetables like bell peppers or broccoli to the pan while cooking the chicken for extra flavor and nutrition. Experiment with different spices such as curry powder for a different flavor profile. Ensure your chicken is well cooked by checking its internal temperature reaches 165°F.
