  • 1/4 cup packed light brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil (or your preferred cooking oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350 degrees F. Spray a 9x5 inch loaf pan with cooking spray.
  • In a large bowl, add the grated zucchini, granulated sugar, brown sugar, applesauce, vegetable oil, eggs, and vanilla. Whisk these ingredients together until well combined.
  • Add in the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Stir the mixture just until there are no dry flour bits left, being careful not to over mix.

Baking

  • Pour the batter into the prepared loaf pan and bake in the preheated oven for 50 to 54 minutes. A toothpick inserted into the center should come out with moist crumbs.

Cooling and Serving

  • Allow the bread to cool in the pan for 10 minutes. Then, remove it from the pan and transfer it to a wire rack to cool completely before slicing.
