  • 1.5 cups mashed over-ripe bananas (about 3 large bananas) Use very ripe bananas for the best flavor.
  • cup butter (melted)
  • ¾ cup granulated sugar Split into two portions for the batter and the cinnamon mixture.
  • 1 large egg (beaten)
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1.5 cups all-purpose flour Can be substituted with whole wheat flour for a healthier twist.
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon Combine with sugar for the swirl.

Instructions
 

Preparation

  • Preheat the oven to 350 degrees Fahrenheit. Grease and flour a 9 x 5-inch loaf pan, or line it with parchment paper.
  • In a large bowl, mix 1.5 cups mashed bananas, ⅓ cup melted butter, ¾ cup granulated sugar, 1 beaten egg, and 1 teaspoon vanilla extract.
  • Add 1 teaspoon baking soda, ¼ teaspoon salt, and 1.5 cups all-purpose flour. Mix until just combined; be careful not to overmix!
  • Pour half of the batter into the greased pan.
  • In a small bowl, combine ⅓ cup granulated sugar and 1 tablespoon ground cinnamon. Sprinkle about ¾ of this mixture over the batter.
  • Add the remaining batter on top and sprinkle the rest of the cinnamon sugar mixture over it.

Baking

  • Bake for 50-60 minutes. To check for doneness, insert a toothpick into the center; it should come out mostly clean.
  • Allow the bread to cool completely before slicing.

Notes

Best served warm or at room temperature. Pairs well with coffee or tea. Can add nuts or chocolate chips for extra flavor.
