Churro Chex Mix
A delightful and crunchy snack that combines the flavors of sweet churros and Chex cereal, perfect for parties or movie nights.
Ingredients
Cereal Base
- 4 cups rice Chex cereal
- 4 cups cinnamon Chex cereal
Coating
- 1 package (11 ounces) white chocolate chips
- ½ cup unsalted butter
Sugar Mix
- 1 cup powdered sugar
- ½ cup granulated sugar
- 3 teaspoons ground cinnamon
Instructions
Preparation
- In a large bowl, combine 4 cups rice Chex cereal and 4 cups cinnamon Chex cereal. Gently stir to combine and set aside.
- In a small bowl, mix 1 cup powdered sugar, ½ cup granulated sugar, and 3 teaspoons ground cinnamon. Stir to combine and set aside.
Coating the Cereal
- Melt ½ cup unsalted butter in a medium-sized saucepan over low heat.
- Once the butter starts to melt, stir in the 11-ounce package of white chocolate chips. Stir continuously until the mixture is melted and smooth.
- Pour the chocolate mixture over the cereal in the large bowl. Gently stir until the cereal is evenly coated.
Final Touch
- Transfer the coated cereal to a large Ziplock bag.
- Sprinkle the powdered sugar mixture over the coated cereal in the bag. Seal the bag and shake to coat the cereal well.
Serving
- Store the Chex mix in a Ziplock bag before serving and enjoying. Serve in a large bowl or in individual bags for easy snacking.
Notes
For added flavor, sprinkle a bit of sea salt on top after coating the mix. Customize the mix by adding nuts, pretzels, or dried fruit.
