Chocolate Strawberry Yogurt Clusters

Ingredients
  

Yogurt Mixture

  • 1.5 cups chopped strawberries Choose ripe strawberries for the best flavor.
  • 1 cup plain Greek yogurt You can use flavored yogurt, but it may change the overall flavor.
  • 1 tbsp honey Feel free to adjust the sweetness to preference.
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup semi-sweet chocolate chips You can also use white chocolate chips.
  • 2 tbsp coconut oil Can be omitted, but it helps the chocolate to thin for easier dipping.

Instructions
 

Preparation

  • In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Combine thoroughly.
  • Scoop out about 2 tablespoons of the yogurt mixture and place them on a parchment paper-lined baking sheet or large plate to form clusters. You should be able to make about 10 clusters.
  • Place the baking sheet with the yogurt clusters in the freezer. Freeze until they are completely solid, about 1 to 2 hours.

Coating

  • Once frozen, melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl, and microwave in 15 or 30-second intervals, stirring in between each interval, until the chocolate is melted.
  • Remove the frozen yogurt clusters from the freezer and carefully dip each one into the melted chocolate. Use a spoon to ensure each cluster is well-coated.
  • After coating with chocolate, place each cluster back on the prepared baking sheet. If desired, sprinkle some sea salt on top for extra flavor.
  • Return the clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify.

Notes

To store the clusters, keep them in an airtight container in the freezer for up to a month. Separate layers with parchment paper to prevent sticking. Experiment with toppings like crushed nuts or sprinkles for added fun.
