Ingredients
  

For the cookies

  • 1 cup all-purpose flour (spooned and leveled)
  • 2/3 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 10 tablespoons unsalted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1/4 cup white sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 3/4 cup chocolate chips (semi-sweet or dark)

For the raspberry cream cheese frosting

  • 1 cup raspberries (fresh or frozen – if using frozen berries, make sure they aren’t frozen in syrup)
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 1 oz full-fat cream cheese (brick style)
  • 1.5 to 2 cups powdered sugar Adjust sweetness to taste
  • 1/4 teaspoon salt

Instructions
 

Chocolate Cookies

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, mix together flour, cocoa powder, baking soda, and salt.
  • In another bowl, beat softened butter with brown and white sugar until creamy.
  • Add the egg and vanilla to the butter mixture and mix well.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Stir in chocolate chips.
  • Scoop about a tablespoon of dough and shape into balls. Place them on the prepared baking sheet about 2 inches apart.
  • Bake for about 10-12 minutes. Let them cool completely.

Raspberry Cream Cheese Frosting

  • In a bowl, blend the softened butter and cream cheese until smooth.
  • Gradually add the powdered sugar and salt. Mix until creamy.
  • Gently fold in the raspberries, being careful not to break them too much to keep some chunks.

Making Your Sandwiches

  • Take one chocolate cookie and spread a generous amount of raspberry frosting on the flat side.
  • Top with another chocolate cookie, flat side down, to create a sandwich.
  • Repeat with the remaining cookies and frosting.

Notes

Store the sandwich cookies in an airtight container at room temperature for up to three days. Freeze cookies without frosting for longer storage. Let them thaw before adding the frosting. You can use store-bought frosting, but homemade adds a special touch.
