  • 4 pounds chicken wings and drumettes
  • 4 teaspoons baking powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper

For the sauce

  • 3 tablespoons chili garlic sauce
  • 2 tablespoons honey
  • 2 tablespoons melted butter
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 teaspoon lime zest (from 1 lime)

Preparation

  • Preheat your oven to 450 degrees Fahrenheit. Line a large baking sheet with foil and place a wire rack on top. Set aside.
  • Dry the chicken wings and drumettes with paper towels to ensure they are as dry as possible.
  • In a large bowl, mix together the baking powder, salt, and black pepper.
  • Add the chicken to the bowl and coat them well with the mixture.
  • Lay the chicken on the baking sheet, ensuring that the wings do not touch each other.

Cooking

  • Bake the chicken for 20 minutes. Flip the chicken using tongs or forks and bake for another 15 minutes.
  • While the chicken is baking, prepare the sauce by combining chili garlic sauce, honey, melted butter, lime juice, and lime zest in a small bowl. Stir well, heating in the microwave briefly if the butter doesn't mix.
  • After baking, remove the chicken from the oven and brush it with the prepared sauce.
  • Cook the chicken for another 15 minutes with the sauce.
  • Remove from the oven and serve hot.

Notes

These wings are best served hot with ranch or blue cheese dressing for dipping, along with celery and carrot sticks for a complete snack. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 375°F until heated through.
