  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth Use low-sodium if preferred.

Instructions

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  • Add the ground beef to the pot, breaking it up as it cooks until browned.
  • Drain any excess grease.

Cooking

  • Stir in the diced potatoes and chicken broth, bringing the mixture to a boil.
  • Reduce heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.
  • Pour in the milk and heavy cream, stirring to combine and heat through without boiling.
  • Gradually add the shredded cheddar cheese, stirring until fully melted and the soup is smooth.

Final Touches

  • Season the soup with salt and pepper to taste.
  • Let the soup simmer for an additional 5-10 minutes to allow flavors to meld and thicken.
  • Ladle the soup into bowls and serve hot, garnishing with more cheese, bacon bits, or green onions if desired.

Notes

For extra flavor, consider adding diced carrots or celery with the onions. Store in a refrigerator for up to 3 days or freeze for up to 3 months.
