Cheeseburger Stuffed Jalapeno Poppers

  • 16 pieces jalapeno peppers
  • 1 pound extra lean ground beef
  • 1 tablespoon olive oil
  • 1 ounce taco seasoning 1 packet
  • ½ cup cream cheese divided
  • ½ cup shredded sharp cheddar cheese divided

Instructions
 

Preparation

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or spray it with nonstick cooking spray. Set aside.
  • Cut each jalapeno in half lengthwise. Carefully remove the veins and seeds from each pepper. Place the jalapenos on the prepared baking sheet.
  • Heat the olive oil over medium-high heat in a large skillet. Add the beef and crumble it as it cooks. About halfway through cooking, stir in the taco seasoning. When the beef is no longer pink, drain if necessary and set aside.

Stuffing

  • Stuff each half jalapeno with 1 teaspoon of cream cheese, followed by a spoonful of the beef mixture. Sprinkle with shredded cheese. Repeat with all of the jalapenos.

Baking

  • Bake for 25-35 minutes, or until the jalapenos are tender and the cheese is melted.

Notes

Wear gloves when handling jalapenos to avoid irritation from the spicy oils. For a milder flavor, remove all the seeds and veins from the jalapenos. Experiment with different types of cheese to customize the flavor to your liking. Store leftovers in an airtight container in the refrigerator for about 3-4 days.
