Ingredients
  

Shrimp and Seasonings

  • 1 LB Jumbo shrimp Make sure to use jumbo shrimp for best texture.
  • 1 Tablespoon Cajun seasoning Adjust to suit your spice preference.
  • 1/2 Tablespoon Onion Powder
  • 1/2 Tablespoon Garlic Powder
  • 1/2 Tablespoon Paprika
  • 1 Teaspoon Black Pepper

Rice and Vegetables

  • 1 1/3 Cup Rice (Long Grain)
  • 2 2/3 Cup Chicken broth
  • 1/4 Cup Onion (Chopped)
  • 1/4 Cup Red pepper (Chopped)
  • 1/4 Cup Green pepper (Chopped)
  • 4 Tablespoon Butter
  • 1 Teaspoon Garlic (Chopped)

Instructions
 

Preparation

  • In a bowl, add all your seasonings and mix them together well. Set aside.
  • Get your skillet or any pot of your choice and place it on a medium-high stove.
  • Add the butter into the pot. Once it has melted, add the garlic, chopped red pepper, green pepper, and onions.
  • Next, add the rice and stir for about 2 minutes.
  • Add half of your Cajun seasoning to the rice and mix well.
  • Pour in the chicken broth and stir everything together.

Cooking

  • Cover the pot with a lid and allow it to simmer for 15 minutes.
  • Meanwhile, add the shrimp to a bowl. Drizzle olive oil over the shrimp and sprinkle the mixed seasoning generously. Rub in well.
  • After 15 minutes, remove the lid and add the shrimp to the pot.
  • Let it simmer for 5 to 7 more minutes.
  • Mix everything together again and taste. You can add more seasoning if you like.

Notes

Serve your Cajun Shrimp and Rice Skillet hot. Great on its own or with a fresh side salad or cornbread. Garnish with chopped green onions or fresh parsley. To store leftovers, let cool completely and place in an airtight container in the refrigerator for up to 3 days.
