Main Ingredients
- 1 cup white rice dry
- 2 cups chicken broth
- 1 pound fully cooked smoked sausage sliced
- 1 bell pepper diced
- 1 onion diced
- 2 stalks celery diced
- 3 cloves garlic minced
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- green onions for garnish
As Needed
- water as needed if the skillet or rice dries
Method
Heat the olive oil in a large lidded skillet over medium heat. Cook the fully cooked smoked sausage for 3–5 minutes, turning, until the cut sides brown.
Add onion, bell pepper, and celery; cook over medium heat for 5–7 minutes until softened, adding a splash of water if the skillet dries. Stir in garlic for 30 seconds, then the Cajun seasoning for 30 seconds.
Add the dry rice and broth and bring to a boil. Cover and simmer on LOW for about 20 minutes until the rice is tender and the liquid absorbed; add a little hot water and continue covered if the grains are firm and dry.
Remove from heat and rest covered for 5 minutes. Fluff, taste for salt and pepper, add green onions, and divide into four servings.
- Refrigerate promptly at 40°F or below; use within 3 days.
