  • 1 pound chicken breasts (cooked and shredded)
  • 8 ounces cream cheese (softened) Ensure cream cheese is softened for easier mixing.
  • 1 cup sour cream
  • 1/2 cup buffalo sauce (Frank's Red Hots is my favorite) Adjust according to your taste for spice level.
  • 1 1/2 cups shredded cheddar cheese (divided) Save half for topping.
  • 2 Tablespoons blue cheese dressing (or Ranch, for garnish) Use for drizzling before serving.

Preparation

  • In a large bowl, combine shredded chicken, cream cheese, sour cream, buffalo sauce, and 1 cup of the shredded cheddar cheese. Mix with a large spatula until fully combined.
  • Spread the mixture in the bottom of a 1.5 qt baking dish.
  • Sprinkle the remaining 1/2 cup cheddar cheese over the top.

Cooking

  • Bake in a 350°F oven, uncovered, for 15-20 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and immediately drizzle with blue cheese or ranch dressing.

Serving

  • Serve hot with a variety of dippers like Fritos scoops, baguette slices, and fresh veggies such as carrots and celery sticks.

Notes

You can prepare the dip ahead of time. Store in an airtight container in the refrigerator for up to three days. To reheat, place it in the oven at 350°F until warmed through or heat it in the microwave. For a healthier option, substitute cream cheese with Greek yogurt or use turkey instead of chicken.
