  • 1 cup cooked sausage or bacon Chopped, can substitute with turkey or veggie sausage
  • 1 cup fresh veggies Diced, like bell peppers, onions; can mix in spinach or tomatoes
  • 1/2 cup sour cream Or Greek yogurt as a healthier alternative
  • Hot sauce To taste, for extra flavor boost

Preparation

  • Whisk the eggs in a bowl, then pour them into a hot skillet. Cook, stirring gently, until fluffy and fully set, about 3-4 minutes.
  • In the same skillet, add your chopped sausage or bacon. Sauté until crispy and browned, approximately 5-7 minutes.
  • On a large tortilla, layer scrambled eggs, cooked sausage or bacon, shredded cheese, diced veggies, and a dollop of sour cream. Add hot sauce if desired.
  • Carefully bring the edges of the tortilla towards the center, tucking in all the fillings. Fold to create a compact wrap.
  • Heat a non-stick skillet over medium heat. Place the crunchwrap seam-side down and cook for 3-4 minutes, until golden brown and crispy. Flip and repeat.

Notes

Customize the fillings based on what you have on hand. Add spices or herbs to the scrambled eggs for extra flavor. If you're short on time, prep the ingredients the night before to streamline the cooking process. Leftovers can be stored in an airtight container in the refrigerator for up to two days.
