Ingredients
  

Meat and Dairy

  • 1 lb bacon (sliced) Cooked until crispy.
  • 6 large eggs (beaten)
  • 3 cups cheddar cheese (grated)
  • 1 1/2 cups cottage cheese

Vegetables and Potatoes

  • 1 small onion (diced) Sautéed until soft.
  • 4 cups shredded hash browns (frozen) Thaw if clumped up.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the bacon over medium heat until it’s crispy. Remove the bacon and set it aside, leaving the drippings in the skillet.
  • In the same skillet, add the diced onion and sauté until it’s soft, about 3-4 minutes.
  • In a large bowl, mix together the beaten eggs, hash browns, cheddar cheese, cottage cheese, sautéed onion, and cooked bacon. Stir until everything is well combined.
  • Pour the mixture into a greased 9x13 inch baking dish.

Cooking

  • Bake in the preheated oven for 45-50 minutes, or until the casserole is set and golden on top.
  • Let it cool for a few minutes before slicing and serving.

Notes

Best served warm. Cut into squares and serve directly from the baking dish. Goes well with fresh fruit or toast. Add salsa or hot sauce for extra flavor. Leftovers can be stored tightly covered in the refrigerator for 3-4 days or frozen for up to 2 months.
