  • 8 slices deli ham
  • 12 large eggs
  • ¼ cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter for cooking
  • 8 8-inch flour tortillas
  • 1 ½ cups pico de gallo
  • 1 ½ cups grated cheddar cheese

Preparation

  • In a large bowl, whisk together eggs, sour cream, salt, and black pepper.
  • Heat butter in a non-stick skillet over medium heat. Pour in the egg mixture and scramble until fully cooked (about 2-3 minutes). Remove from the pan and set aside.

Assembly

  • Take one tortilla and place a slice of ham on it.
  • Add approximately ½ cup of scrambled eggs, 1-2 tablespoons of pico de gallo, and sprinkle with cheddar cheese.
  • Roll the burrito from the bottom to the top, folding in the sides as you go. Repeat until all burritos are filled.

Notes

Serve warm with extra salsa, hot sauce, or guacamole. Store leftovers tightly wrapped in plastic or foil in the refrigerator for up to 3 days, or freeze for up to a month. Make sure to whisk the eggs well for fluffiness. You can customize with other ingredients like bell peppers, onions, or spinach. For a variation, swap deli ham for bacon or sausage.
