BLT Pasta Salad

A delicious twist on the classic bacon, lettuce, and tomato sandwich, this pasta salad features crispy bacon, fresh romaine lettuce, and juicy tomatoes combined with a creamy dressing.

Ingredients
  

Pasta and Vegetables

  • 12 ounces uncooked short pasta (such as rotini or bowtie)
  • 3 cups packed chopped romaine lettuce
  • 1 pint halved cherry or grape tomatoes

Bacon

  • 1 cup chopped crisp bacon (about 12 ounces of bacon)

Dressing

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup milk
  • 1 tablespoon apple cider vinegar
  • 1 ½ tablespoons Homemade Ranch Seasoning Mix (half a 1-ounce packet of ranch seasoning)

Instructions
 

Cooking Pasta

  • Bring a large pot of salted water to a rolling boil.
  • Cook the uncooked short pasta according to the package instructions.
  • Drain the pasta and rinse it with cold water to stop the cooking process. Toss it with a little olive oil to prevent clumping.

Mixing Ingredients

  • In a large bowl, combine the cooled pasta, chopped bacon, chopped romaine lettuce, and halved tomatoes.
  • In a small bowl, whisk together mayonnaise, sour cream, milk, apple cider vinegar, and ranch seasoning mix.
  • Pour the dressing over the salad and toss until everything is evenly coated.

Notes

Great for potlucks and picnics! If the salad becomes dry, add more dressing before serving. Best consumed within the first day or two.
