Ingredients

Main Ingredients

  • 1 lb Smoked Sausage, sliced fully cooked, ready-to-eat smoked sausage, sliced
  • 2 medium Yukon Gold Potatoes, chopped about 1 pound total, cut into ½-inch cubes
  • 2 medium Zucchini, sliced Substitute with bell peppers or yellow squash.
  • 1 medium Onion, diced Replace with carrots or mushrooms if desired.
  • 1 medium Red Bell Pepper, chopped Can use green peppers if substitution needed.

Seasoning

  • 1 tsp Garlic Powder Or use fresh garlic if preferred.
  • 1 tsp Onion Powder Can be omitted for a milder flavor.
  • 1 tsp Smoked Paprika Substitute with regular paprika and a touch of chili powder if needed.
  • 1 tsp Black Pepper Adjust to taste.
  • 1 tsp Salt up to this amount, to taste; sausage can be salty

For Cooking

  • 2 tbsp Oil Use olive or vegetable oil based on your taste.

For Cooking the Potatoes

  • ¼ cup water plus a splash more if the pan dries before the potatoes soften

Instructions

  • Heat 1 tablespoon oil in a wide skillet. Add potato cubes, stir, and carefully add ¼ cup water. Cover 8–10 minutes until the centers start to soften, adding a small water splash if necessary.
  • Remove the lid, evaporate remaining liquid, and brown potatoes around 5 minutes. Add fully cooked sausage and remaining oil as needed; heat 3–4 minutes.
  • Cook onion and red pepper with the mixture about 5 minutes. Add zucchini and both powdered aromatics, followed by paprika and pepper. Season with salt only as needed and cook a further 5–7 minutes.
  • Confirm potatoes are fork-tender and the finished mixture is heated to 165°F. Evaporate loose liquid uncovered if needed, then serve 4 portions.

Notes

Use only fully cooked ready-to-eat smoked sausage for this sequence. Cut potatoes into ½-inch cubes and start them before adding softer vegetables. The 30-minute cook time is approximate; check tenderness and the 165°F reheating target.
