  • 1 whole bell pepper (chopped)
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Preparation

  • In a large pot, heat some oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until softened.
  • Add the sausage and cook until browned.
  • Stir in the cumin, paprika, salt, and pepper.
  • Add the black beans, rice, and broth. Bring to a boil, then cover and reduce heat to low.
  • Let it simmer for about 20-25 minutes or until the rice is cooked and the liquid is absorbed.
  • Fluff the rice with a fork, garnish with cilantro if desired, and serve warm.

Notes

You can serve this dish in bowls, topping it with fresh cilantro. It pairs well with a side salad or avocado slices. For variations, consider using quinoa instead of rice or adding jalapeños for heat.
