Main Ingredients

  • 3-4 pieces Chicken Breasts Use fresh chicken breasts for best flavor.
  • 2 C Chicken Broth
  • 3 C Water Reserved from cooking chicken.
  • 1 piece Green Onion Chopped.
  • 4 TBSP Mayo Adjust based on preference for creaminess.
  • 3 TBSP Black Pepper Adjust to taste.
  • to taste Salt Add according to preference.

Cooking the Chicken

  • In a large pot, combine the chicken broth, water, and chicken breasts. Cook until the chicken is fully cooked.
  • Once the chicken has boiled completely, remove it and let it drain, keeping the water and chicken broth mixture on the stove.
  • Cut the chicken breasts in half and place them in the food processor to shred.

Preparing the Salad

  • While the chicken is cooking, chop up the green onion and place it in a large bowl.
  • Add the shredded chicken to the bowl with the green onions.
  • Pour in the mayo and mix it with the chicken.
  • To moisten, add a tablespoon at a time of the reserved water/broth mixture, about 5 to 7 tablespoons, depending on the size of your chicken breasts.
  • Mix in salt and black pepper to taste, adjusting as necessary.
  • Chill the chicken salad in the refrigerator before serving.

Notes

Chicken salad can be served on a bed of lettuce, in a sandwich, or as a cracker topping. Store in an airtight container in the fridge for 3-5 days. Experiment with additional ingredients like chopped celery or grapes for added crunch and sweetness.
