  • 3 pieces bananas Ripe bananas are preferred.
  • 5 tablespoons butter
  • cup brown sugar
  • 3 tablespoons rum Use quality rum for better flavor.
  • 2 teaspoons vanilla Use pure vanilla extract for the best taste.
  • ½ teaspoon cardamom
  • ½ teaspoon cinnamon
  • cup coarsely chopped walnuts Can be substituted with pecans.
  • Vanilla ice cream for serving Generous scoops recommended.

Instructions
 

Preparation

  • Peel and slice the bananas in half lengthwise.
  • Coarsely chop the walnuts and set both the bananas and walnuts aside.

Cooking

  • In a large skillet, melt the butter over medium heat.
  • Add brown sugar, rum, vanilla, cardamom, and cinnamon to the skillet, whisking to combine. Bring to a low boil.
  • Add prepared bananas and walnuts to the skillet. Cook until bananas are tender and begin to caramelize, about 2 minutes.

Serving

  • Scoop warm banana mixture over a generous scoop of vanilla ice cream.
  • Optional: Sprinkle additional walnuts on top for added crunch.

Notes

Best enjoyed fresh. If storing leftovers, place in an airtight container in the refrigerator for up to two days. Reheat before serving if needed.
