Main Ingredients
- 3 ripe bananas mashed, about 1 1/4–1 1/2 cups
- 1/3 cup butter melted and slightly cooled
- 1 teaspoon baking soda
- 1 pinch salt
- 3/4 cup granulated sugar
- 1 large egg beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour spooned and leveled
As Needed
- butter or cooking spray as needed to grease the pan
Mix and Bake
Heat oven to 350°F and lightly grease an 8×4-inch loaf pan. Mash bananas in a large bowl to about 1 1/4–1 1/2 cups.
Stir slightly cooled melted butter into the bananas. Mix in sugar, beaten egg, and vanilla until evenly blended.
Add flour, baking soda, and salt evenly and fold just until no dry flour remains. Scrape into the pan and level the top.
Bake at 350°F for 55–65 minutes until a skewer in the center comes out with moist crumbs and no wet batter. Loosely tent with foil if the top browns early.
Cool in the pan 10 minutes, then turn onto a rack for about 50 more minutes. Cut into 10 slices once cooled.
- Wrap only after the loaf has cooled completely; keep at room temperature for up to 3 days.
- Freeze wrapped slices for up to 2 months and thaw while covered.
