  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour spooned & leveled
  • 5 cups corn flakes cereal crushed lightly
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 2 large eggs
  • 1/4 cup milk
  • 3/4 cup favorite BBQ sauce (e.g., Sweet Baby Ray's Original)
  • 1/4 cup honey
  • 1/4 cup ketchup

Instructions
 

Preparation

  • Preheat your oven to 400°F (204°C). Line 2 large baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, put the bite-sized pieces of chicken. Add the flour and stir to coat each piece. Set this bowl aside.
  • In another bowl, combine the crushed corn flakes, salt, pepper, garlic powder, and smoked paprika.
  • In a small bowl, whisk together the eggs and milk.
  • Dip each piece of chicken in the egg mixture, letting any excess drip off. Then roll it in the cornflake mixture, shaking off any leftovers. Place on the prepared baking sheet.

Cooking

  • Bake for 18 minutes, flipping the chicken bites halfway through cooking.
  • In a small saucepan over medium heat, combine the BBQ sauce, honey, and ketchup. Cook for about 5 minutes while whisking occasionally.
  • Carefully place the chicken bites into a large bowl. Pour the warm honey BBQ sauce on top and gently stir to coat.

Serving

  • Serve warm, optionally with extra BBQ sauce or ranch dressing for dipping.

Notes

Cut the chicken into uniform pieces for even cooking. Optionally add cayenne pepper for extra spice or double coat for extra crunch.
