Ingredients
  

Taco Shells and Filling

  • 10 pieces flat-bottomed hard taco shells
  • 3 cups cooked shredded chicken Use leftover or rotisserie chicken for quicker preparation.
  • 1 medium lime Juice from 1 lime.
  • 2 teaspoons taco seasoning
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • 2 cups shredded cheddar cheese

Toppings

  • 2 tablespoons chopped cilantro
  • 1 ½ cups shredded romaine lettuce
  • 1 cup pico de gallo or salsa Choose your favorite or make fresh.

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Arrange the taco shells inside a 9x13-inch baking dish.
  • In a medium bowl, combine the cooked shredded chicken, lime juice, taco seasoning, ground cumin, and garlic powder. Stir until well coated.
  • Divide the chicken mixture among the taco shells and top each with shredded cheddar cheese.

Baking

  • Bake in the oven for 10 minutes, or until warmed through and cheese is melted.

Serving

  • Sprinkle with chopped cilantro. Divide the shredded romaine lettuce and pico de gallo or salsa among the tacos and serve immediately.

Notes

Serve warm with extra toppings like sour cream or guacamole. Leftovers can be stored in the fridge for up to 3 days.
