  • 1 pound uncooked and chopped shrimp Use the freshest shrimp for the best flavor.
  • ½ cup fresh lime juice
  • 2 chopped Roma tomatoes
  • ¼ cup diced red onion
  • 1 diced jalapeno pepper Reduce amount or remove seeds for less spice.
  • ¼ cup chopped cilantro Garnish before serving for added flavor.
  • 3 diced avocados Add just before serving to prevent browning.

Preparation

  • In a large bowl, add the uncooked and chopped shrimp and pour in the fresh lime juice. Let it stand for 5 minutes until the shrimp turns opaque.
  • Add the chopped Roma tomatoes, diced red onion, jalapeno pepper, and chopped cilantro to the shrimp and lime juice. Toss everything together gently.
  • Cover the bowl and refrigerate for about an hour, allowing the flavors to blend.
  • Before serving, add the diced avocados and toss lightly. Season with salt and pepper to taste.

Notes

This ceviche is best served chilled. Pairs well with tortilla chips or can be enjoyed on its own. Keep leftovers in an airtight container and consume within one day to maintain freshness.
