Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a bowl, mix together the flour, sugar, ground cinnamon, baking powder, and salt.
  • In another bowl, whisk together the eggs, melted butter, and milk until smooth.
  • Combine the wet and dry ingredients until just mixed. Then, fold in the diced apples gently.
  • Fill each cupcake liner with batter about two-thirds full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let them cool completely.

Frosting

  • For the frosting, beat the softened butter until creamy.
  • Gradually add powdered sugar, followed by ground cinnamon, vanilla extract, and heavy cream until smooth and fluffy.
  • Frost the cooled cupcakes with the cinnamon buttercream.

Notes

Serve with a sprinkle of cinnamon on top or a slice of fresh apple. Store in an airtight container at room temperature for up to three days. For longer storage, refrigerate for a week or freeze for up to three months. Use a mix of sweet and tart apples for more flavor and ensure butter is at room temperature for a creamy frosting.
