Ingredients
  

Vegetables

  • 1 cup broccoli florets
  • 1 cup cremini mushrooms (large ones halved or quartered)
  • 1/2 cup thinly sliced carrots (about two small-medium, peeled)
  • 1 small zucchini (sliced)
  • 1 small red bell pepper (roughly diced)
  • 1 small-medium red onion (roughly diced)

Seasoning and Oil

  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon grated parmesan cheese (optional; or grated Romano cheese)
  • Salt and ground black pepper (to taste)

Instructions
 

Preparation

  • Pre-heat the air fryer for 5 minutes on the highest temperature setting.
  • In a bowl, combine the vegetables with olive oil, balsamic vinegar, minced garlic, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  • Place the seasoned vegetables in the hot air fryer basket. If needed, cook in two batches.

Cooking

  • Air fry at 390°F for 7-8 minutes.
  • After that time, shake the basket and sprinkle the veggies with parmesan cheese.
  • Continue air frying for another 3-8 minutes, depending on how tender you like them.

Notes

Cut vegetables into similar sizes to ensure even cooking. Experiment with different vegetables or seasonings for variety. Adjust the cooking time based on your desired level of tenderness.
