  • 1 large eggplant, sliced into ¼-inch rounds Choose a firm fresh eggplant.
  • ½ teaspoon Kosher salt
  • 1 large egg This helps the coating stick.
  • ½ cup panko breadcrumbs For a crispy texture.
  • cup all-purpose flour
  • ½ teaspoon Italian seasoning Add more if desired.
  • ¼ teaspoon garlic powder
  • ¼ cup grated parmesan cheese

Preparation

  • Sprinkle the eggplant slices with ½ teaspoon Kosher salt on both sides. Place them on a paper towel for 20 minutes to absorb any liquid and flip halfway through.
  • In a small bowl, whisk 1 egg and set it aside.
  • In a medium bowl, combine panko breadcrumbs, all-purpose flour, Italian seasoning, garlic powder, and grated parmesan cheese.

Coating

  • Dip the eggplant slices into the egg mixture, coating both sides.
  • Coat the egg-coated slices in the panko mixture and place them on a plate.

Cooking

  • Arrange the eggplant slices in a single layer in the air fryer basket. Spray both sides with olive oil spray.
  • Cook at 375°F for 15-20 minutes until golden brown, flipping halfway through. Work in batches if needed.

Serving

  • Serve with marinara sauce for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the air fryer at 350°F for a few minutes to restore crispness. Experiment with different cheeses or seasonings for variations.
