Ingredients
  

Main Ingredients

  • 1 cup peanuts Use any nuts or seeds you prefer.
  • 1 cup dates (pitted) Dates should be pitted for easy processing.
  • 1 cup dried apricots

Instructions
 

Preparation

  • Place the peanuts, dates, and dried apricots in a food processor. Pulse a few times to break them up.
  • If the dates start to clump, separate them and scrape the edges of the bowl as needed.
  • Continue processing for another 1-2 minutes, until the mixture clumps together and forms a ball.
  • Lay a piece of parchment paper on your work surface about the size of a baking sheet.
  • Press the dough down with your hands to form a thick square, roughly 8" x 8". You can use a rolling pin for a smooth finish.
  • Wrap the pressed dough in plastic wrap and chill in the fridge for at least one hour or overnight.

Cutting & Storage

  • After chilling, unwrap the power bar dough and transfer it to a cutting board.
  • Cut into 8 large bars or 16 small squares, based on your preference.
  • Wrap each bar in plastic wrap or wax paper.

Notes

Store the energy bars in an airtight container in the fridge for up to a week. For longer storage, freeze them for up to 3 months to prevent freezer burn.
